Porky Pig 'n' Rice

Chinese BBQ Pork with Rice Yum Yum !!

Ingredients :
  • 400g Pork Fillet, thinly sliced
  • 1/2 cup Chinese BBQ Marinade
  • 2 teaspoons of Honey
  • 2 tablespoons of Peanut Oil
  • 1 Clove Garlic, freshly crushed
  • 2 teaspoons Ginger, freshly grated
  • 4 Spring Onions, sliced (also known as Shallots or Scallion)
  • 1 bunch of Baby Bok Choy, stems and leaves sliced (diagonally)
  • 100g Snow Peas, trimmed and sliced
  • 3 cups of Long Grain Rice, cooked (white is best)

Instructions:

1. Combine the Marinade and Honey in a large bowl

2. Add Pork, coat and leave for about 10 minutes

3. Heat half the oil in a Wok or frying pan over medium to high heat

4. Stir-fry the Pork in batches for 3-4 mins or until browned, remove and set aside

5. Heat the remaining oil and add the Garlic, Ginger, Spring Onions, Bok Choy and Snow Peas

6. Stir-fry for 2-3 minutes or until the Bok Choy has wilted

7. Add the Rice and cooked Pork and Stir-fry until heated through.

8. Enjoy
