Peri-Peri Spicey Prawns

Peri-Peri coated-battered-fried Prawns

Ingredients :

  • 1kg medium raw Prawns
  • Peanut Oil
  • 2 tablespoons Lemon Juice
  • 2 teaspoons Peri-Peri Seasoning (aka Piri-Piri or Pili-Pili)
  • 2 teaspoons Parsley Flakes
  • 1 clove Garlic, freshly crushed
  • ½ cup Plain Flour
  • Lemon or Lime Wedges to serve

Instructions:

1. Remove the shells from the Prawns if not already removed, leave the tail intact.

2. Using a sharp knife “butterfly” each Prawn (cut along the back starting at the top and cut towards the centre, remove the veins and guts and press flat)

3. Combine 1 tablespoon of the Peanut Oil, Lemon Juice, Peri-Peri Seasoning, Parsley and Garlic in a mixing bowl.

4. Add the Prawns and coat with the mixture, then dip the Prawns into the Flour and coat lightly

5. Heat Oil in a wok or frying pan. Cook the Prawns in batches for 1-2 minutes or until golden and crisp

6. Serve with Lemon or Lime Wedges (or both )
